Canarian cuisine is liked not only by the local people but also by the visiting tourists. Tourists often like to carry with them fond memories of their stay and also some exclusive Canarian recipes for various beef, pork, fish and mutton delicacies. There are over one hundred traditional dishes in the Canary Islands.
Where can you get the traditional Canarian dishes?
While a majority of the tourist resorts do not serve these delicious dishes, you can go to locations where the local people eat. If you want to make an approximation to these types of restaurants, in Tenerife they are called “Guachinche”. This word comes down from the English expression “I’m watching you!” Used by the English buyer to indicate that he was prepared to test local products. The Canarian vocabulary comes from many languages (Spanish, Portuguese, English …), but that’s for another post!
Canarian Goat Meat Recipes
Goat Meat preparations are very popular in Tenerife and in fact, all over the Canary Islands. Some tourists do have their reservations about eating goat meat. But delicious Canarian Goat Meat preparations, particularly “Carne Cabra”, are commonly available in every corner of the Canary Islands. This appetizing dish is somewhat cumbersome to make and has a typical and likable flavor. We give below the recipe for this delicious dish.
Carne de Cabra recipe
Fresh goat meat – 1 kg.;
Cooking oil – 1 small cup;
Onion – 1;
Red pepper – 1;
Red hot pepper – 1;
Red wine – 1 small cup;
Clove, Paprika, Thyme, Cumin, Salt and Water.
1. Season the chopped goat meat dices.
2. Lightly fry onion in the cooking oil.
3. Add meat and fry till golden brown.
4. Add pepper, hot pepper, paprika, clove, thyme, wine and cumin and let it cook for 15 minutes.
5. Add water to fully cover the meat dices. Let it cook for an hour and a half.
6. Complement with “papas arrugadas” (a type of potato cooked in the Canary Islands).
